Greek Style Couscous Salad


Greek Salad is one of my favorites. The tartness of the dressing, the saltiness of the feta, the crunch of the cucumbers, and the sharpness of the red onion all make me a happy girl. I wanted something a bit more substantial and hearty feeling than a lettuce salad. This is what I came up with; even my picky boy loves the couscous.

Greek Style Couscous Salad

1/4 c. couscous
15 oz. garbanzo beans, drained and rinsed
1/2 seedless cucumber
1/4 red onion 
1 medium tomato
2-3 oz. crumbled feta cheese
2 oz. kalamata olives

Dressing:
2 T. red wine vinegar
2 T. lemon juice
1 garlic clove, minced
1/3 c. olive oil
1/2 t. kosher salt
1/4 t. black pepper

1.  Cook couscous according to directions, drain, and spread on a plate to cool.

2. Combine beans, chopped vegetables, and cheese in a medium bowl.  Add cooled couscous.

3.  Combine dressing ingredients in a jar or measuring cup. Shake or whisk until well blended.  Pour over salad ingredients.

4.  Mix gently to coat with the dressing.  Chill until ready to serve.
