Ramen Cabbage Salad



While this salad is not difficult to make, it tastes great and can be eaten as the main dish or a side.  To make it feel more like a meal, you can add shredded chicken or pork.

Ramen Cabbage Salad

1 pkg. chicken ramen noodles
1 medium small cabbage
1 bunch green onions
1/3 c. slivered almonds

1/2 c. canola oil
1/2 c. sugar
2 T. low sodium soy sauce
1/4 t. ground pepper
1/2 t. sesame oil
1 t. sesame seeds

1. Cut into quarters and thinly slice cabbage. Place in a large bowl. Thinly slice green onions and add to cabbage. Set aside.

2.  Heat 1 t. canola oil and add 1/2 ramen seasoning packet and almonds.  Stir constantly until the almonds are lightly browned. Add to cabbage mixture.

3. Heat 1 t. canola oil and add the second 1/2 of the seasoning packet and dry crumbled ramen. Stir constantly until the noodle are lightly browned. Add to cabbage mixture.

4. In a 2-cup measuring cup, combine oil, sugar, soy sauce, and pepper. Whisk to combine and pour over cabbage mixture. Use tongs to mix well and serve.
