Cinnamon Sugar Roasted Almonds


Roasted almonds are a snack I could eat every day. Add cinnamon sugar by way of a honey butter coating and others can't stay away.  These make great gifts since most people like them but not many know how to make them.

Cinnamon Sugar Roasted Almonds



2 c. whole almonds, skins on
¼ c. honey
2 T. butter
1 c. granulated sugar
1 t. ground cinnamon
1/2 t. salt

1.  Spread almonds in a single layer on a baking pan. Place in a cold oven and heat to 350°.

2.  Bake 15-20 minutes, or until you can smell them.  In a small bowl, combine sugar, cinnamon, and salt and set aside.

3.  In a medium saucepan, heat butter & honey until boiling.  Add almonds and simmer for 2-5 minutes.

4.  Use a slotted spoon to transfer to a cool baking pan.  Cool slightly before sprinkling with cinnamon sugar mixture.  Stir and continue sprinkling with the cinnamon sugar mixture until completely coated. Stir occasionally until cooled.
