Chocolate Chip Bar Cookies

I have been researching coconut oil and experimenting with it in the kitchen (and for cosmetic purposes).  I like the way it adds a subtle flavor component to baked goods.  Here, the chocolate cookies get treated in a new way with coconut oil and a little extra chocolate.  The best part about cookies is the smile I see when I share them with loved ones.

Chocolate Chip Bar Cookies

1 c. unsalted butter or coconut oil, room temperature
3/4 c. brown sugar, packed
3/4 c. granulated sugar
2 eggs, room temperature
1 t. vanilla
1 c. whole wheat flour
1 1/2 c. AP flour
1/2 t. salt
1 t. baking soda
2 c. chocolate chips
1/2 c. chocolate chips

1.  Cream butter/oil and sugars with mixer until smooth.  Add eggs, one at a time, and vanilla. Mix well.

2.  On a sheet of waxed or parchment paper, combine flours, salt, and baking soda.  Add to wet ingredients and mix, just until combined. 

3.  Add 2 c. of chocolate chips and pulse mixer (or stir in by hand).

4.   Spread cookie dough into a 9x13 inch pan.  Bake 25-28 minutes on 375 degrees.

5.  Remove from oven and sprinkle with ½ c. chocolate chips and return pan to turned off oven for 3 minutes.

6. Spread with a knife and cool completely before cutting into squares and serving.
