Vegetarian 3 Bean Slow Cooker Chili
1 small onion, diced
1 clove garlic, minced
15 oz. can great northern beans, do not drain
15 oz. can dark kidney beans, drained & rinsed
15 oz. can black beans, drained & rinsed
1 pt. or 15 oz. can tomatoes
1 c. chicken or vegetable stock
3 T. chocolate syrup
1 T. chili powder
1 t. salt
1 t. cumin
1/4 t. cayenne
1/4 t. dried oregano
1. In a saute pan, heat 1 t. olive oil over medium heat. Add onion and garlic and cook until translucent.
2. In a slow cooker, combine all the ingredients and give a gentle stir. Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours.
3. Serve immediately or portion into freezer containers to serve later.
