Quinoa and Cheese
3 T. butter
3 T. AP flour
1 1/2 c. milk
1/4 c. half & half
8 oz. shredded cheddar cheese
1 oz. swiss cheese
1 oz. Parmesan cheese
2 oz. shredded mozzarella cheese
1 t. salt
1/2 t. ground pepper
4 c. cooked quinoa
1 c. peas, broccoli, or cauliflower, optional
1/4 c. chopped ham or 2 T. bacon, optional
1. In a medium saucepan, melt butter over medium heat and whisk in flour. Gradually whisk in milk and half & half. Continue whisking until bubbly.
2. Add cheese a handful at a time and whisk to incorporate. Season with salt and pepper.
3. Stir in quinoa and vegetables & meat to cover thoroughly. Serves 4.
4. If you like a crunchy crust, pour into a greased baking pan and sprinkle on bread crumbs and olive oil. Bake at 350 degrees for 15 minutes.
