Granola with dried fruits


I used to buy granola, mostly as a yogurt topper. After tweaking this recipe, I've stopped buying it. You can add whatever dried fruits you like. My family loves the dried blueberries and freeze-dried strawberries. I recently learned the freeze-dried versions of both are available at Trader Joe's and Target.

Homemade Granola

1 c. old fashioned oatmeal
1/2 c. shredded coconut
1/2 c. sliced almonds
2 T. wheat germ
2 T. canola oil
2 T. honey
1 T. maple syrup
pinch of salt
1. Preheat oven to 350 degrees.
2. In a medium mixing bowl, combine oatmeal, coconut, almonds, oil, honey, maple syrup, and salt. Stir to combine. Pour onto a cookie sheet.
3. Bake 20 minutes or until golden brown. Stir often until dry. Stir in dried fruit. Keeps 1-2 weeks in food storage container.
