Stuffed Pizza


My family loves pizza and one of our favorite variations is this stuffed pizza.  My favorite part is that everyone gets their own pizza so toppings are completely customized to the individual.  My daughter even gets a mini version for her. :)

Stuffed Pizza

1 pkg. actice dry yeast
1 c. warm water (120-125 degrees)
1 1/4 c. whole wheat flour
3/4 t. salt
2 T.  + 2 T. olive oil
1 1/2 to 2 c. AP flour
2/3 c. pizza sauce
pizza toppings, such as pepperoni, ham, bacon, onions, pepperoncini, tomatoes, bell pepper slices
1 1/2 c. shredded mozzarella cheese

1.  Preheat oven to 375 degrees.  Brush 2 cookie sheets with olive oil.

2. Combine yeast and warm water in bowl of stand mixer with dough hook attachment. Let sit for a few minutes to activate yeast.

3. Turn mixer on low speed. Add whole wheat flour, salt, and olive oil. Mix to combine. Stop mixer, scrape sides, and mix on medium speed for 3 minutes.

4. Add 1 1/2 c. AP flour and turn mixer on medium speed for 8-10 minutes, sprinkling in the last 1/2 c. AP flour, only if needed. Dough should form a ball in the mixer.

5. Cut dough in 2 equal pieces. Set one piece aside. Roll out first piece to a 14" circle.  Fold in half and press fold.

6.  Transfer dough to baking sheet.   Open dough and arrange sauce, toppings, and cheese as desired.  Close dough, press edge closed with fork tines, and brush top with olive oil.   Repeat with second dough.

7. Bake for 30-35 minutes, or until golden brown.  Cut into 4 wedges and serve with additional sauce.
Other ideas:
A. Roll out each half, place on a baking stone, and brust with olive oil.  Bake at 475 for 3-4 minutes.  Spread sauce to approximately 1/2" from the edge. Sprinkle crust with toppings and cheese. Bake for 3-5 minutes.  

B. Do not divide in half, roll out and place on a baking sheet. Cover and let rise for 30 minutes. Bake 5-7 minutes alone then add toppings and bake additional 5-8 minutes.

C. Preheat outdoor grill. Divide into 3 or 4 parts, roll out, and brush with olive oil. Grill first side for 2-3 minutes, turn and add toppings. Close grill and cook for 2 minutes or until cheese is melted. Great for summer parties!

D. Use one half for pizza, the second half, allow to rise for 30 minutes. Brush with garlic infused olive oil (or olive oil & garlic powder) and parmesan cheese. Bake for 8-10 minutes and cut into sticks for breadsticks.
