It's Saturday morning and my kids requested pancakes for breakfast. This is a quick breakfast that oftens turns into a Friday night dinner with a few add-ons - bacon, cubed & sauteed potatoes, and maybe eggs. The recipe originated from How to Cook Everything but as is generally the case, I've made a few changes.


1/2 c. whole wheat AP flour
1 1/2 c. unbleached AP flour
1/2 t. baking soda
1/2 t. salt
1 T. baking powder
2 T. sugar
2 eggs
2 c. buttermilk
1/4 c. butter, melted

1. In a medium bowl, mix flours, baking soda, salt, baking powder and sugar.

2. In a small bowl, stir together buttermilk, eggs, and cooled butter. Pour liquids into dry ingredients and whisk to combine.

3. Cook to a medium golden brown in a saute pan or griddle. If you like, sprinkle with mini chocolate chips, blueberries, or diced bananas while the first side is cooking.

4. Serve with maple syrup or applesauce.

Makes 15-20 pancakes
